blast beets- blast beets is our tart blonde base refermented on black peppercorn, thyme, and local beets from sweitzer farms in cobden, il. this beer fills the glass with a wonderful rose color and explodes with aromas of beets, malt, and herbs. pairs with cheese boards, charcuterie, fatty pork dishes, and all things goat cheese

parsec- a dry hopped barrel fermented sour ale. We fermented this juicy sour ale in french oak barrels and then dry hopped with centennial and mandarina bavaria hops. This beer is a wonderful introduction to sour beers with it’s restrained acidity and balanced hop character .

F.B.F.S.- “First brewdays freaking suck” we’ve come so far since that very first brew day when we were learning the ins and outs of our new brewhouse. the letters f.b.f.s were written on that first barrel that we filled in memory of that day and as a name for the mixture of yeasts that it now contained. this beer is one of our country ales, which is a term that we use in place of saison or farrmhouse, and is at the heart of our seasonal brewing practices. the blonde base for this beer was fermented directly in french oak barrels and aged there for several months to allow the multitude of wild yeasts to do their work. we hope that you will try this bottling both in it’s youth and with some age as it will continue to evolve in the bottle over the next year or two.
